Mediterranean Pistachio & Honey Ice Cream
Creamy, nutty, and delicately sweet, this Mediterranean-inspired pistachio and honey ice cream combines rich cream, roasted pistachios, and fragrant honey for an elegant frozen dessert that’s perfect for warm days.
Ingredients
2 cups heavy cream (480 ml)
1 cup whole milk (240 ml)
¾ cup honey (180 ml)
4 egg yolks
1 teaspoon vanilla extract
1 cup shelled pistachios, finely chopped (120 g)
1 tablespoon orange blossom water (optional)
Pinch of salt
Instructions
In a saucepan, combine the heavy cream, milk, honey, and salt. Heat over medium heat until hot but not boiling.
In a separate bowl, whisk the egg yolks until smooth.
Slowly pour about ½ cup of the hot cream mixture into the egg yolks while whisking constantly to temper them.
Gradually whisk the tempered yolks back into the saucepan.
Cook over low heat, stirring continuously, until the mixture thickens enough to coat the back of a spoon (about 5–7 minutes). Do not boil.
Remove from heat and stir in the vanilla extract and orange blossom water, if using.
Let the mixture cool completely, then refrigerate for at least 4 hours or overnight.
Churn in an ice cream maker according to the manufacturer’s instructions.
During the last few minutes of churning, add the chopped pistachios.
Transfer to an airtight container and freeze for 3–4 hours before serving.
No Ice Cream Maker Method
After chilling the mixture, pour it into a freezer-safe container. Freeze and stir vigorously every 30–45 minutes for 3–4 hours until creamy and frozen.

Freeze Time: 4 hours
Total Time: 8 hours 15 minutes
Servings: 6–8 servings
