Ingredients:
For the Chicken & Potatoes
2 lbs boneless, skinless chicken thighs
1½ lbs baby Yukon Gold potatoes, halved
3 tablespoons olive oil
2 tablespoons balsamic vinegar
Juice of 1 large lemon
1 tablespoon Dijon mustard
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried dill
1 teaspoon smoked paprika
1 teaspoon kosher salt
½ teaspoon black pepper
For the Toppings
½ cup green olives
¼ cup sliced pepperoncini
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh oregano
1 tablespoon toasted sesame seeds
For the Tzatziki Feta Sauce
¾ cup Greek yogurt
½ cup crumbled feta cheese
¼ cup grated cucumber, squeezed dry
1 tablespoon lemon juice
1 tablespoon olive oil
1 small garlic clove, grated
1 teaspoon chopped fresh dill
Salt and black pepper to taste
Directions:
Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.
In a bowl, whisk together olive oil, balsamic vinegar, lemon juice, Dijon mustard, garlic, oregano, dill, smoked paprika, salt, and pepper.
Add the chicken and potatoes to the bowl and toss until evenly coated.
Arrange the chicken and potatoes in a single layer on the prepared sheet pan.
Roast for 35 to 40 minutes, turning the potatoes halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and tender.
For extra caramelization, broil for 2 to 3 minutes at the end of cooking.
Meanwhile, combine Greek yogurt, feta, cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper in a bowl until creamy.
Remove the pan from the oven and scatter the olives, pepperoncini, fresh dill, and oregano over the chicken and potatoes.
Spoon generous dollops of the Tzatziki feta sauce over the dish and finish with toasted sesame seeds.
Serve immediately with lemon wedges and warm pita bread if desired.
