Sweet Chili Lime Butter Cod Skillet

Ingredients
4 cod fillets, about 5–6 oz (140–170 g) each
1 tbsp olive oil
2 tbsp butter, divided
3 cloves garlic, minced
⅓ cup sweet chili sauce
1½ tbsp soy sauce
2 tbsp fresh lime juice
1 tsp lime zest
1 tsp sesame oil
½ tsp red pepper flakes, optional
Salt and black pepper, to taste
1 tsp sesame seeds
2 tbsp chopped green onions
Fresh cilantro and lime wedges, for serving
Instructions

  1. Season the cod: Pat the cod fillets dry with paper towels. Season both sides lightly with salt and black pepper.
  2. Sear: Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the cod and cook for about 3–4 minutes per side, until golden. Transfer carefully to a plate.
  3. Make the glaze: Reduce heat to medium. Add the remaining tablespoon of butter and garlic. Cook for about 30 seconds. Stir in the sweet chili sauce, soy sauce, lime juice, lime zest, sesame oil, and red pepper flakes.
  4. Glaze the cod: Let the sauce simmer for 1–2 minutes until slightly thickened and glossy. Return the cod to the skillet and spoon the sauce generously over each fillet. Cook another 1–2 minutes, until the cod is opaque and flakes easily.
  5. Serve: Sprinkle with sesame seeds, green onions, and cilantro. Serve immediately with lime wedges and extra skillet sauce spooned over the fish.
    Serving idea: Excellent with jasmine rice, coconut rice, roasted vegetables, or steamed broccoli.
