Bang Bang Chicken Fried Rice

Ingredients
For the Chicken:
1½ pounds (680 g) boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon vegetable oil
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
For the Fried Rice:
4 cups cooked rice (preferably day-old)
2 tablespoons vegetable oil
2 eggs, lightly beaten
1 cup frozen peas and carrots
3 green onions, sliced
3 cloves garlic, minced
3 tablespoons soy sauce
1 tablespoon sesame oil
For the Bang Bang Sauce:
½ cup mayonnaise
¼ cup sweet chili sauce
1 tablespoon sriracha (adjust to taste)
1 tablespoon honey
Instructions
In a bowl, toss the chicken cubes with paprika, garlic powder, onion powder, salt, and pepper.
Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook the chicken for 6–8 minutes, stirring occasionally, until golden brown and cooked through. Remove and set aside.
In the same skillet, heat 2 tablespoons oil. Add the beaten eggs and scramble until just set.
Stir in the peas, carrots, and garlic. Cook for 2–3 minutes.
Add the cooked rice and stir-fry for 3–4 minutes until heated through.
Mix in the soy sauce and sesame oil, then add the green onions.
In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth.
Return the chicken to the skillet and toss with half of the Bang Bang sauce.
Serve the chicken fried rice hot, drizzled with the remaining sauce.
Tips
Day-old rice gives the best fried rice texture.
Add extra vegetables like bell peppers, corn, or broccoli for more color and nutrition.
For extra heat, increase the amount of sriracha.
