Garlic Parmesan Shrimp Roll-Ups

  • 1 lb shrimp, peeled and deveined
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 8 soft flour tortillas
  • 2 tbsp butter, melted
  • 1/2 tsp garlic salt
  • 1/2 tsp dried parsley
  • 1/2 cup melted butter, optional
  • 4 cloves garlic, minced, optional
  • 1 tbsp lemon juice, optional
  • 1 tbsp chopped parsley, optional

1- Prepare the Filling:
In a bowl, blend cream cheese, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and black pepper. Fold in the shrimp gently so the filling stays creamy and well distributed.
2- Roll the Tortillas:
Warm the tortillas just enough to make them flexible. Spoon the shrimp filling down the center of each one and roll tightly.
3- Brush for Baking:
Arrange the roll-ups seam-side down in a greased baking dish. Stir melted butter with garlic salt and dried parsley, then brush it generously over the tops.
4- Finish in the Oven:
Bake at 375°F for 18 to 20 minutes, until the roll-ups are golden, lightly crisp, and bubbling at the edges. Let them rest briefly before serving.
5- Add the Optional Dip:
For the dipping sauce, warm melted butter with minced garlic for 30 seconds, then stir in lemon juice and parsley. Serve the roll-ups hot with the sauce on the side.
