🥮💚 Baklava Pistachio Cheesecake Supreme

Ingredients

Baklava Base

  • 12–14 sheets phyllo pastry
  • 1/2 cup unsalted butter, melted
  • 1 cup pistachios, finely chopped
  • 1/2 cup walnuts, finely chopped
  • 1 teaspoon cinnamon
  • 2 tablespoons honey

Cheesecake Filling

  • 24 oz (680g) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 cup finely chopped pistachios

Honey Syrup

  • 1/2 cup honey
  • 1/4 cup water
  • 1 tablespoon lemon juice

Garnish

  • 1/2 cup chopped pistachios
  • Honey for drizzling
  • Optional: crushed baklava pieces

Instructions

1. Prepare the Baklava Base

  1. Preheat oven to 325°F (165°C).
  2. Grease a 9-inch (23 cm) springform pan.
  3. Layer the phyllo sheets into the pan, brushing each sheet generously with melted butter.
  4. Mix pistachios, walnuts, cinnamon, and honey.
  5. Sprinkle the nut mixture between several layers of phyllo.
  6. Allow some phyllo edges to extend over the sides of the pan for a rustic baklava look.

2. Make the Cheesecake Filling

  1. Beat cream cheese until smooth and creamy.
  2. Add sugar and mix until combined.
  3. Beat in eggs one at a time.
  4. Mix in vanilla extract, sour cream, and heavy cream.
  5. Fold in chopped pistachios.
  6. Pour the filling over the prepared baklava base.

3. Bake

  1. Wrap the outside of the springform pan with foil.
  2. Place the pan in a larger roasting pan and add hot water halfway up the sides.
  3. Bake for 60–70 minutes, or until the center is slightly set.
  4. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
  5. Remove and cool completely, then refrigerate for at least 6 hours or overnight.

4. Prepare the Honey Syrup

  1. Combine honey, water, and lemon juice in a small saucepan.
  2. Simmer for 3–4 minutes.
  3. Let cool slightly.

5. Finish and Serve

  1. Drizzle the honey syrup over the chilled cheesecake.
  2. Sprinkle generously with chopped pistachios.
  3. Garnish with crushed baklava pieces if desired.
  4. Slice and serve chilled.
