1 tsp paprika
Pinch of salt
For the Creamy Herb Dip
¾ cup (180 ml) Greek yogurt
2 tbsp mayonnaise
1 tbsp fresh parsley, finely chopped
1 tsp lemon juice
½ garlic clove, grated
Salt and black pepper, to taste
For the Fresh Salad
Lettuce leaves
½ cucumber, sliced
2 tomatoes, sliced
¼ red onion, thinly sliced
A drizzle of olive oil
Directions
Step 1: Prepare the Chicken
Preheat the oven to 425°F (220°C) or an air fryer to 400°F (200°C).
Set up three shallow bowls:
Flour in the first bowl.
Beaten eggs in the second.
Breadcrumbs mixed with Parmesan, paprika, garlic powder, onion powder, parsley, salt, and pepper in the third.
Coat each chicken tender in flour, dip into the eggs, then cover thoroughly with the seasoned breadcrumb mixture.
