Ingredients
For the Chicken:
4 chicken leg quarters
3 tbsp unsalted butter, melted
2 tbsp olive oil
4 cloves garlic, minced
1 tsp paprika
1 tsp dried oregano
1 tsp dried thyme
1 tsp onion powder
Β½ tsp black pepper
1 tsp salt
1 tbsp fresh parsley, chopped (for garnish)
For the Fries:
4 large potatoes, cut into fries
2 tbsp olive oil
1 tsp paprika
Β½ tsp garlic powder
Β½ tsp salt
ΒΌ tsp black pepper
Instructions
Preheat your oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper or lightly grease it.
In a small bowl, combine melted butter, olive oil, garlic, paprika, oregano, thyme, onion powder, salt, and pepper.
Pat the chicken leg quarters dry and rub the herb butter mixture all over them.
Arrange the chicken on one side of the baking sheet.
In a separate bowl, toss the potato fries with olive oil, paprika, garlic powder, salt, and pepper. Spread them on the other side of the baking sheet.
Bake for 40β45 minutes, turning the fries halfway through cooking, until the chicken reaches an internal temperature of 165Β°F (74Β°C) and the fries are golden and crispy.
For extra crispiness, broil for 2β3 minutes at the end of cooking.
Garnish the chicken with fresh parsley and serve hot with the crispy fries.
