Sticky Honey Garlic Chicken Drumsticks with Rice and Roasted Broccoli



Ingredients
For the Chicken Drumsticks
8 chicken drumsticks
1 tablespoon olive oil (15 ml)
1 teaspoon paprika (3 g)
1 teaspoon garlic powder (3 g)
1/2 teaspoon onion powder (1.5 g)
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Honey Garlic Sauce
1/4 cup honey (85 g)
3 cloves garlic, minced
2 tablespoons soy sauce (30 ml)
1 tablespoon ketchup (15 ml)
1 tablespoon apple cider vinegar or lemon juice (15 ml)
1 teaspoon cornstarch mixed with 2 teaspoons water (optional, for a thicker sauce)
For the Rice
1 cup uncooked long-grain rice (about 190 g)
2 cups water or chicken broth (475 ml)
Pinch of salt
For the Roasted Broccoli
2 broccoli crowns, cut into florets
1 tablespoon olive oil (15 ml)
1/2 teaspoon garlic powder
Salt and black pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Toss the drumsticks with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
Arrange on a baking tray and bake for 35–40 minutes, turning halfway through.
Meanwhile, combine honey, garlic, soy sauce, ketchup, and vinegar in a small saucepan. Simmer for 3–5 minutes. Add the cornstarch slurry if you want a thicker glaze.
Brush the chicken generously with the sauce and bake for another 10–15 minutes, until sticky, caramelized, and the internal temperature reaches 165°F (74°C).
Cook the rice according to package directions.
Toss the broccoli with olive oil, garlic powder, salt, and pepper. Roast on a separate tray for 18–20 minutes, until tender and lightly browned.
Serve the sticky honey garlic drumsticks over rice with the roasted broccoli, and drizzle any remaining sauce over the chicken.
