Soft Milk Brioche Rolls



Ingredients
4 cups (500 g) all-purpose flour
2 large eggs, at room temperature
1 cup (240 ml) whole milk, warmed to about 110°F (43°C)
¼ cup (50 g) granulated sugar
2¼ teaspoons (1 packet) active dry yeast
1 teaspoon salt
¼ cup (60 g) unsalted butter, softened
1 egg yolk + 1 tablespoon milk (for egg wash)
Instructions
In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
In a large mixing bowl, whisk together the flour and salt.
Add the eggs and yeast mixture to the flour. Mix until a dough begins to form.
Add the softened butter and knead for 8–10 minutes until the dough becomes smooth and elastic.
Place the dough in a lightly greased bowl, cover, and let it rise in a warm place for about 1–1½ hours, or until doubled in size.
Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball.
Arrange the dough balls on a lined baking tray or in a greased baking dish. Cover and let rise again for 30–45 minutes.
Preheat the oven to 350°F (175°C).
Brush the tops with the egg wash for a beautiful golden finish.
Bake for 18–22 minutes, or until the rolls are golden brown and cooked through.
Allow the rolls to cool slightly before serving.
Tips
For extra softness, brush the warm rolls with melted butter immediately after baking.
