Ingredients
4 cups fresh blueberries
1½ cups granulated sugar
Zest of 1 lemon
Juice of 1 lemon
Pinch of salt
Instructions
Rinse the blueberries and place them in a large saucepan.
Add the sugar, lemon zest, lemon juice, and a pinch of salt.
Stir well and bring the mixture to a gentle boil over medium heat.
Reduce the heat and simmer for 20–30 minutes, stirring occasionally and lightly mashing some of the berries as they cook.
Continue cooking until the jam thickens to your desired consistency.
Remove from heat and allow the jam to cool slightly.
Transfer the jam to clean sterilized jars and seal tightly.
Refrigerate after cooling completely.
Tips
For a smoother jam, mash the berries more thoroughly while cooking.
For a chunkier texture, leave most of the berries whole.
Store refrigerated for up to 3 weeks, or process in a water-bath canner for longer shelf storage.
