Ingredients

- 2 cups (300 g) grated carrots
- 3 eggs
- 1 cup (200 g) sugar
- 1/2 cup (120 ml) vegetable oil

- 1 tbsp baking powder

For the Chocolate Topping:
- 1 cup (180 g) semi-sweet chocolate chips
- 1/2 cup (120 ml) heavy cream
- 1 tbsp butter
Instructions
- Preheat your oven to 350°F (180°C) and grease a 9-inch (23 cm) cake pan.
- In a large bowl, whisk together the eggs, sugar, oil, milk, and vanilla.
- Add the grated carrots and mix well.
- Stir in the flour, baking powder, cinnamon, and salt until just combined.
- Pour the batter into the prepared pan.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely.
Prepare the Chocolate Topping:
- Heat the cream until hot but not boiling.
- Pour it over the chocolate chips and let sit for 2 minutes.
- Add the butter and stir until smooth and glossy.
- Spread the chocolate topping evenly over the cooled cake.
