Ingredients
Chicken
2 chicken breasts
2 tbsp olive oil
2 garlic cloves, minced
1 tsp paprika
1 tsp dried parsley
½ tsp oregano
Salt and pepper
¼ tsp crushed chili flakes
1 tbsp lemon juice
Sweet Potato Fries
2 sweet potatoes
2 tbsp olive oil
1 tsp paprika
Salt and pepper
Coleslaw
2 cups shredded cabbage
1 shredded carrot
¼ cup mayonnaise
1 tbsp sour cream
1 tsp apple cider vinegar
1 tsp honey
Salt and pepper
Garnish
5 cucumber slices
1 red pepper strip
Method
Roast the seasoned sweet potato fries at 425°F (220°C) for 30–35 minutes, turning once.
Marinate the chicken with olive oil, garlic, herbs, lemon juice, and spices.
Grill or pan-cook for 6–7 minutes per side, then rest before slicing.
Mix the coleslaw dressing and toss with the cabbage and carrot.
Plate the sliced chicken with the fries, coleslaw, cucumber, and bell pepper. Finish with parsley and chili flakes.
Tips
Fresh herbs add even more flavor.
Resting the chicken keeps it juicy.
The coleslaw tastes even better after chilling for 30 minutes.
