Blackened Salmon & Garlic Butter Shrimp Bake



Ingredients
For the Salmon
1 large salmon fillet (about 700–900 g / 1½–2 lbs)
2 tbsp olive oil
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
½ tsp cayenne pepper (optional)
1 tsp salt
½ tsp black pepper
For the Shrimp
500 g (1 lb) large shrimp, peeled and deveined
2 tbsp butter, melted
3 cloves garlic, minced
1 tsp paprika
Salt and pepper to taste
Vegetables
1 large onion, sliced
2 tbsp butter
2 cloves garlic, minced
Garnish
Fresh parsley, chopped
Lemon wedges
Instructions

  1. Preheat the Oven
    Preheat your oven to 200°C (400°F).
  2. Season the Salmon
    Mix together:
    Smoked paprika
    Garlic powder
    Onion powder
    Thyme
    Cayenne
    Salt
    Black pepper
    Rub the salmon with olive oil, then coat evenly with the seasoning mixture.
  3. Prepare the Pan
    Spread the sliced onions in a baking dish or foil pan.
    Add:
    Butter
    Minced garlic
    Place the seasoned salmon on top.
  4. Bake the Salmon
    Bake for 15–18 minutes.
  5. Season the Shrimp
    While the salmon is baking, toss the shrimp with:
    Melted butter
    Garlic
    Paprika
    Salt
    Pepper
  6. Add the Shrimp
    Remove the pan from the oven.
    Arrange the shrimp around the salmon.
    Return to the oven and bake for another 6–8 minutes, or until the shrimp are pink and fully cooked.
  7. Finish
    Sprinkle with chopped parsley and serve with fresh lemon wedges.
    Optional Garlic Butter Sauce
    Mix together:
    4 tbsp melted butter
    3 minced garlic cloves
    1 tbsp lemon juice
    1 tsp Italian seasoning
    ½ tsp paprika
    Pour over the salmon and shrimp before serving for extra flavour.
    Serve With
    Steamed rice
    Garlic mashed potatoes
    Roasted asparagus
    Green beans
    Fresh salad
