Chocolate Peanut Butter Clusters


Ingredients
1 cup creamy peanut butter
1/4 cup unsalted butter
1 teaspoon vanilla extract
2 cups quick oats
1 cup powdered sugar
2 cups milk chocolate chips
1 tablespoon coconut oil (optional, for smoother chocolate)
Instructions
Prepare the mixture
In a medium saucepan over low heat, melt the peanut butter and butter together.
Stir in the vanilla extract.
Add dry ingredients
Remove from heat and mix in the oats and powdered sugar until well combined.
Form the clusters
Scoop tablespoon-sized portions onto a parchment-lined baking sheet.
Shape into rough clusters and chill for 20–30 minutes until firm.
Melt the chocolate
Melt the chocolate chips and coconut oil in a microwave-safe bowl, stirring every 20 seconds until smooth.
Coat the clusters
Spoon or dip the chilled clusters into the melted chocolate.
Place them back on the parchment paper.
Set
Refrigerate for about 30 minutes, or until the chocolate is completely set.
Yield
Makes about 18–24 clusters.
Storage
Store in an airtight container in the refrigerator for up to 1 week.
