For the Roasted Potatoes:
1 lb (450 g) red or Yukon gold potatoes, diced
2 tablespoons olive oil
½ teaspoon garlic powder
½ teaspoon paprika

Preheat your oven to 425°F (220°C). Toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly on a baking sheet. Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the outside.
2️⃣ Brown the Sausages
While the potatoes roast, heat olive oil in a skillet over medium heat. Add the sliced sausages and cook for 5–7 minutes, turning occasionally, until nicely browned and slightly caramelized.
3️⃣ Prepare the Eggs
Crack the eggs into a bowl. Add milk, salt, and pepper, then whisk until smooth and well blended.
4️⃣ Cook the Scrambled Eggs
Melt butter in a nonstick pan over low heat. Pour in the egg mixture and cook gently, stirring slowly with a spatula. Fold the eggs softly as they set. Remove from heat while they’re still slightly creamy for the fluffiest texture.
