Better than takeout and incredibly easy to make, this Slow Cooker Cashew Chicken is packed with tender chicken, crunchy cashews, and a rich, savory sauce.
Ingredients
For the Chicken
2 lbs (900 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 cup roasted unsalted cashews
1 red bell pepper, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 tsp fresh ginger, grated
For the Sauce
1/2 cup low-sodium soy sauce
1/4 cup chicken broth
2 tbsp hoisin sauce
2 tbsp brown sugar
1 tbsp rice vinegar
1 tsp sesame oil
1 tbsp cornstarch
2 tbsp water
For Garnish
Sliced green onions
Extra cashews
Sesame seeds (optional)
Instructions
Place the chicken, bell peppers, garlic, ginger, and cashews in the slow cooker.
In a bowl, whisk together the soy sauce, chicken broth, hoisin sauce, brown sugar, rice vinegar, and sesame oil. Pour the sauce over the chicken mixture.
Cover and cook:
Low: 4–5 hours
High: 2–3 hours
In a small bowl, mix the cornstarch and water to create a slurry. Stir it into the slow cooker during the last 20–30 minutes of cooking.
Once the sauce has thickened, gently stir everything together.
Serve hot over steamed rice or noodles.
Garnish with green onions, extra cashews, and sesame seeds before serving.
