4 tilapia fillets
2 tbsp olive oil
1 red bell pepper, sliced πΆοΈ
1 yellow bell pepper, sliced πΆοΈ
3 garlic cloves, minced π§
1 tsp paprika
1 tsp Italian seasoning πΏ
Β½ tsp onion powder
Salt & black pepper to taste π§
Juice of 1 lemon π
Fresh parsley for garnish

Preheat oven to 400Β°F (200Β°C). Lightly grease a baking dish.
Arrange the sliced peppers in the baking dish and drizzle with a little olive oil. Roast for 10 minutes until slightly tender.
In a small bowl, mix olive oil, garlic, paprika, Italian seasoning, onion powder, salt, black pepper, and lemon juice.
Place the tilapia fillets over the roasted peppers and brush the seasoning mixture evenly over the fish.
Bake for 12β15 minutes, or until the tilapia flakes easily with a fork.
Garnish with fresh parsley and serve warm with rice, potatoes, or a fresh salad. π₯β¨
