Roasted Red Pepper, Spinach, and Mozzarella-Stuffed Chicken with a little extra flair


Ingredients:

• 4 boneless, skinless chicken breasts
• 1 cup fresh spinach (or ½ cup frozen, thawed)
• ½ cup roasted red peppers (jarred, drained, chopped)
• 1 cup shredded mozzarella cheese
• 2 tablespoons cream cheese (softened)
• 2 tablespoons olive oil
• 1 teaspoon garlic powder
• 1 teaspoon Italian seasoning
• ½ teaspoon smoked paprika
• Salt and pepper to taste
• Toothpicks (optional)

Instructions:

  1. Prep: Preheat oven to 400°F (200°C). Slice pockets into chicken breasts.
  2. Stuff: Mix spinach, roasted red peppers, mozzarella, and cream cheese. Stuff into chicken pockets; secure with toothpicks if needed.
  3. Season: Rub with olive oil, garlic powder, Italian seasoning, smoked paprika, salt, and pepper.
  4. Roast: Bake in a dish or skillet for 25-30 minutes until 165°F (74°C) internally.
  5. Serve: Rest 5 minutes, remove toothpicks, and enjoy!
