For the Crust:
3 cups all-purpose flour
½ cup granulated sugar
2 sticks (1 cup) unsalted butter, softened
½ teaspoon salt
For the Pecan Filling:
1 cup unsalted butter
1 cup light corn syrup
2 cups brown sugar, packed
4 large eggs
1 tablespoon vanilla extract
½ teaspoon salt
3 cups chopped pecans
👩🍳 Instructions
1️⃣ Preheat Oven
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
2️⃣ Make the Crust
In a large bowl, mix flour, sugar, and salt.
Cut in the softened butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
Press evenly into the bottom of the prepared pan.
Bake for 18–20 minutes, or until lightly golden. Remove from oven and set aside.
3️⃣ Prepare the Filling
In a saucepan over medium heat, melt the butter.
Stir in corn syrup and brown sugar. Cook until the sugar dissolves and the mixture is smooth (about 2–3 minutes).
Remove from heat and let cool slightly.
Whisk in eggs, vanilla extract, and salt until well combined.
Fold in chopped pecans.
4️⃣ Assemble & Bake
Pour the pecan mixture evenly over the warm crust.
Return to oven and bake for 25–30 minutes, or until the center is set.
5️⃣ Cool & Slice
Allow bars to cool completely before slicing. For cleaner cuts, chill in the refrigerator for 1 hour before serving.
