Easy-Peasy Chicken & Veggie Stir-Fry Meal Prep 🍗🥦

Ingredients:
Chicken + Rice
- 1 ½ lb boneless skinless chicken thighs (or breast), cut into bite-size pieces
- 3 cups cooked white rice (jasmine is 🔥)
- 1 tbsp neutral oil (avocado/vegetable)
- Salt + black pepper
Veggies
- 2 cups broccoli florets
- 1 cup mushrooms, sliced
- 1–2 bell peppers (red/yellow/orange), sliced
Stir-Fry Sauce
- ⅓ cup soy sauce
- 2 tbsp oyster sauce (optional but makes it taste legit)
- 1 tbsp honey or brown sugar
- 2 cloves garlic, minced
- 1 tsp grated ginger (optional)
- 1 tbsp cornstarch + 2 tbsp water (slurry)
- 1 tbsp rice vinegar (or apple cider vinegar)
- 1 tsp sesame oil (optional)
Directions:
- Cook the Chicken + Rice:
- Season chicken pieces with salt and black pepper.
- Heat oil in a pan and cook chicken until browned and cooked through.
- Cook white rice separately according to package instructions.
- Prep the Veggies:
- Steam broccoli florets until tender.
- Sauté mushrooms and bell peppers until slightly softened.
- Make the Stir-Fry Sauce:
- In a bowl, mix soy sauce, oyster sauce, honey, garlic, ginger, cornstarch slurry, rice vinegar, and sesame oil.
- Stir-Fry It Up:
- Combine cooked chicken, veggies, and sauce in a large pan.
- Cook until everything is coated and heated through.
