Ingredients:
Chicken + Rice

  1. 1 ½ lb boneless skinless chicken thighs (or breast), cut into bite-size pieces
  2. 3 cups cooked white rice (jasmine is 🔥)
  3. 1 tbsp neutral oil (avocado/vegetable)
  4. Salt + black pepper

Veggies

  1. 2 cups broccoli florets
  2. 1 cup mushrooms, sliced
  3. 1–2 bell peppers (red/yellow/orange), sliced

Stir-Fry Sauce

  1. ⅓ cup soy sauce
  2. 2 tbsp oyster sauce (optional but makes it taste legit)
  3. 1 tbsp honey or brown sugar
  4. 2 cloves garlic, minced
  5. 1 tsp grated ginger (optional)
  6. 1 tbsp cornstarch + 2 tbsp water (slurry)
  7. 1 tbsp rice vinegar (or apple cider vinegar)
  8. 1 tsp sesame oil (optional)

Directions:

  1. Cook the Chicken + Rice:
  • Season chicken pieces with salt and black pepper.
  • Heat oil in a pan and cook chicken until browned and cooked through.
  • Cook white rice separately according to package instructions.
  1. Prep the Veggies:
  • Steam broccoli florets until tender.
  • Sauté mushrooms and bell peppers until slightly softened.
