Hello friends! Feeling like a comforting treat? This Soft Butter Cake is easy to make, and perfect for a cozy afternoon. It’s light, moist, and bursting with buttery goodness – just what we all deserve!
Ingredients:
- 1 ½ cups (190g) all-purpose flour
- * 1 ½ teaspoons baking powder
- * ¼ teaspoon baking soda
- * ¼ teaspoon salt
- * ½ cup (115g) unsalted butter, softened
- * 1 ¾ cups (350g) granulated sugar
- * 2 large eggs
- * 1 teaspoon vanilla extract
- * 1 cup (240ml) buttermilk
Instructions:
- Preheat & Prep: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan. This prevents sticking and makes for easy cleanup!
- Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- Cream Butter & Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy. You can use a hand mixer or do it by hand – a little arm workout never hurt anyone!
- Add Eggs & Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine Wet & Dry: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined – don’t overmix!
- Bake: Pour the batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Cool & Enjoy: Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Dust with powdered sugar (optional) and enjoy a slice with a cup of tea or coffee!
