Ingredients (Serves 4)
4 boneless, skinless chicken breasts
Salt, to taste
Black pepper, to taste
1 tablespoon olive oil
2 tablespoons butter
3 cloves garlic, minced
1 teaspoon fresh thyme leaves (or ½ tsp dried)
1 teaspoon fresh rosemary, chopped
1 cup heavy cream
½ cup chicken broth
½ cup fresh blackberries (plus extra for garnish)
4 slices pepper jack cheese

Instructions
Prepare the chicken
Pat the chicken breasts dry and season generously with salt and black pepper on both sides.
Sear the chicken
Heat olive oil in a large skillet over medium-high heat.
Add the chicken breasts and cook 4–5 minutes per side, until golden brown and almost cooked through. Remove chicken from the skillet and set aside.
Make the garlic herb cream sauce
In the same skillet, reduce heat to medium and add butter.
Sauté minced garlic for 30–60 seconds until fragrant.
Add thyme, rosemary, heavy cream, and chicken broth. Stir to combine.
Gently mash half of the blackberries into the sauce to release their juices. Simmer for 3–4 minutes until slightly thickened. Taste and adjust seasoning with salt and pepper.
Combine chicken and sauce
Return the chicken to the skillet and spoon sauce over each piece.
Place a slice of pepper jack cheese on top of each breast. Cover and let the cheese melt for 2–3 minutes.
