🛒 Ingredients
- 12 oz (340 g) fettuccine pasta
- 14 oz (400 g) smoked sausage, sliced into rounds
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) freshly grated Parmesan cheese
- 1 teaspoon Cajun seasoning (adjust to taste)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Salt to taste
- 1/4 cup reserved pasta water
- Fresh parsley, chopped (for garnish)
👩🍳 Instructions
1️⃣ Cook the Pasta
Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions until al dente.
Reserve 1/4 cup of pasta water, then drain and set aside.
2️⃣ Brown the Sausage
Heat olive oil in a large skillet over medium heat.
Add sliced smoked sausage and cook for 4–5 minutes until browned and slightly crispy.
Remove from skillet and set aside.
3️⃣ Make the Cajun Alfredo Sauce
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
Pour in heavy cream and bring to a gentle simmer.
Stir in Cajun seasoning, smoked paprika, black pepper, and a pinch of salt.
Let simmer for 3–4 minutes until slightly thickened.
Reduce heat to low and stir in Parmesan cheese until melted and smooth.
4️⃣ Combine Everything
Add cooked pasta and browned sausage back into the skillet.
Toss well to coat.
If needed, add reserved pasta water a little at a time to loosen the sauce.

Sprinkle with fresh parsley and extra Parmesan if desired.
