Ultimate Moist Banana Bread with Caramel Glaze

This easy, one-bowl banana bread recipe is incredibly moist and flavorful. Perfect for breakfast or a sweet snack, especially when topped with its signature rich glaze.

Ingredients

For the Banana Bread:

  • Ripe Bananas: 3 to 4 medium bananas, mashed.
  • Butter: ½ cup unsalted butter, melted (or vegetable oil).
  • Sugar: 1 ½ cups granulated sugar.
  • Egg: 1 large egg, beaten (some recipes use up to 4 eggs for a cake-like texture).
  • Vanilla: 1 teaspoon vanilla extract.
  • Baking Powder: 1 tablespoon.
  • Flour: 2 ½ cups all-purpose flour.
  • Milk: ½ cup warm milk.
  • Optional: ½ cup chopped

For the Glaze (Optional):

  • Peanut Butter Glaze: Melted peanut butter or a mix of peanut butter, powdered sugar, and a splash of milk.
  • Caramel Glaze: A simple blend of brown sugar, butter, and heavy crea

Instructions

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, mash the ripe bananas. Stir in the melted butter, sugar, beaten egg, and vanilla extract until well combined.
  3. Add Dry Ingredients: Gradually stir in the warm milk, flour, and baking powder. Mix until just combined; do not overmix.
  4. Bake: Pour the batter into the prepared loaf pan. Bake for 45 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool & Glaze: Let the bread cool in the pan for 10 minutes, then move to a wire rack. Once cooled, drizzle generously with your preferred glaze.

Quick Tips for Success

  • Use Overripe Bananas: The darker the peels, the sweeter and more flavorful your bread will be.
  • Don’t Overmix: To keep the bread soft and tender, stop mixing as soon as the flour disappears.
